The phrase "farm to table" has become ubiquitous when discussing modern cuisine, but many diners may not understand the collaboration that is necessary between farmers and restaurants for a product to appear on a plate, and how a farmer's process can influence flavors.
SCETV's Palmetto Scene was invited along for the ride when the chefs of Columbia's Tallulah took a field trip to Chester's Watson Farms. Executive chef and owner Russell Jones's motto is: "Find the highest quality product you possibly can, and don't screw it up." He and his team were looking for South Carolina-raised meats and found an ideal partnership with head farmer Matt Watson, whose pasture rotation and sustainable methods ensure the sweetest grass-fed beef.
